I am also having this same exact problem except with an EVGA 3080Ti FTW3 Ultra Gaming (12G-P5-3967-KR). I have a fan plugged into the extra, 4th fan header on the GPU but does not show up in Aida64 for me. I am running Aida64 Extreme version 6.75.6115 Beta. I have also attached the output of the nVIDIA SMBus Dump to this post. nvidiasmbusdump.txt
