Nvidia GPU registers dump shows you the current value it is getting from your temperature sensor in real-time. Have you tried to run some 3D rendering for some time to wake the GPU up, make it work and then read the GPU registers dump again. That will clearly show you if the GPU is not reading the temperature properly or is just a bug in the new software version where it isn’t displaying the value that it reads correctly.
