Great questions. Right now, the Elgato Stream Deck is definitely the more mature and flexible option for remote sensor monitoring. You can assign multiple sensors to a single key by using a plugin like "Stream Deck Smart Profile," which allows for dynamic, multi-line displays. Support is excellent.
The Corsair Nexus is more limited since it requires iCUE to be running, which restricts remote monitoring. While I am looking into it, support isn't available yet. For your use case, the Stream Deck is likely the better choice.
