After the latest AIDA64 update, the VRM and PCH sensors are now identified as "Ext #2" and "Ext #3". Additionally, the cooling pump sensor has disappeared from the sensor list. Before the update, all sensors were correctly identified.

What motherboard do you have?  When you say latest update, do you mean the latest beta build of v8.40.8515?

My motherboard is an ASUS ROG Maximus XII Formula – Z490.

Yes, I'm using the same beta version, v8.40.8515.

The issue still occurs occasionally, but whenever it happens, I just restart my computer and everything goes back to normal.

The EC (Embedded Controller) of your motherboard (as well as several other ROG motherboards) is a bit unstable and that causes issues about reading certain sensor values on your motherboard such as PCH temperature, TSensor temperature, VRM temperature and CPU OPT fan.  When the issue occurs, the PCH and VRM temperature are simply gone and not replaced by the Ext #2 and Ext #3 temperatures.
