We constantly improve hardware support for both new and old motherboards and processors. So yes, an AIDA64 update could well improve on previous shortcomings of the AIDA64 hardware monitoring module.

The latest AIDA64 release (v7.30) implement a new option called SensorPanel pinning. It could help you about this issue. You can enable that option in AIDA64 / Preferences / Hardware Monitoring / SensorPanel.
1) You cannot use sensors that your hardware doesn't support.
2) Those are the sensors that are exposed via various hardware monitoring modules of AIDA64. It is almost the entirety of sensors, but some special ones only appear on the Computer / Sensor page.
