They use AIDA64 specifically. They provide some samples with their panels, and frequently used the rslcd method rather than sensorpanel method (or at least they used to). The rslcd method allows the use of animated graphics, but you lose the 16 frame gauges and only have basic bar graphics instead.

Maybe Aida64 dont get your Sensor from the GPU.
Do you have the latest version from Aida64?
or you have to add the sensor again

Another thing if you use CAM or any other monitoring software it can interfere with AIDA64. I use CAM for my AIO and it takes out several readings from AIDA64

I've been looking for a long time, but I have to say those that I find good are usually available in a different resolution.

How do you all make all the custom gauges and the like?  And where do you get the icons, I have tried google search but cant really find anything.

You can make it with graphic programs like photoshop or something.
On Google you find many icons, mostly you need to remove the background.
What do you need exactly, maybe we can help?

I'm completely new to this, I see the panel's others have made, and I want to use the ryzen and asus icons/ pictures, and other such items as I try to build my panel, just having a really hard time figuring where to get them or how to make them. I'm not very creative...lol

Ok I understand, you just need to figure out how it works.
On YouTube, you can find videos how do you make those things.
Maybe this helps you a little, these icons are without background.
